Super Chocolatey Brownies

My brownies are made of finest ingredients and made-to-order only. Bulk orders come during the ber-months since this is one of the common gifts during Christmas season yet always appreciated.

These three variants are my bestsellers. They can be fudgy or cakey, depending on the customer preference. I also make walnut brownies and cream cheese brownies but for special order only and charged at slightly higher price.

Lara Joyce 2nd Birthday

Lara Joyce is my youngest cousin. But this little girl is more fondly called "Tiyang Lara". She just turned 2 last December but she already has 3 pamangkins courtesy of her fellow cousins.

This is the cake i made for her when she celebrated her 2nd birthday. Her mama Emma, my aunt requested for an orange chiffon cake and so, I obediently did. :)

Moist Chocolate Cake

This is my chocolate cake recipe. I promised to Carolyn that I will post this recipe so that everyone can also try this.

Black Princess

(Natilla-Filled Chocolate Cake)

Cake:

2/3 cup cocoa powder

1 1/2 cups all-purpose flour

1 3/4 cups sugar

1 1/4 teaspoon baking powder

1 teaspoon fine salt

2/3 cup butter

1 cup water

3 large eggs

1/2 teaspoon vanilla powder

Natilla:

1/2 cup condensed milk

1 cup milk

1 egg yolk

1 tablespoon cornstarch

1/2 teaspoon vanilla

1 tablespoon butter

Chocolate Icing:

1/2 cup cocoa powder

1 teaspoon coffee

2 cups evap milk

1 cup condensed milk

1/4 cup all-purpose flour

2 teaspoon baking soda

1 tablespoon butter

Procedure:

1. Preheat oven to 350 degree F.

2. Grease and line two 9-inch round pans.

3. Sift first 6 ingredients together. Set aside.

4. Cream butter until fluffy. Add sifted ingredients alternately with water and mix until smooth. add eggs, one a time and vanilla. mix until well-blended.

5. Pour into prepared pans. bake for 40 minutes or until ineserted toothpick comes out clean. Let cool.

6. Combine all ingredients for natilla except butter in a double-boiler and cook until thick. Remove from fire. Stir in butter.

7. In a heavy bottom saucepan, mix together all ingredients for chocolate icing except baking soda and butter. Cook until thick; stir in baking soda and butter.

8. To assemble: Spread the natilla between the layers of cake. Ice decoratively with chocolate icing.

Cake Decorating Class I

April 2006 when I enrolled at Heny Sison Culinary School for it short course in Basic Cakes and Icing. It was my preparation for baking Mica's 1st bday cake. I intended to enrol in the series of Cake Decorating Clases but schedule made me postpone my class reservation again and again. Finally, I made it on September 2007.

Cake Decorating Class I taught us the uses of basic decorating tips and made a character cake as a final project. I chose Sesame Street's Big Bird because this is the character my daughter Mica really loves.

I first wanted to decorate Strawberry Shortcake, which by the way, Chef Heny Sison told us that it was her very first character baking pan, quite an antique, we joked. She said she should put that in her memorabilia after using it since she was in her teens(?). Anyway, her Strawberry Shortcake pan doesn't really looked like an antique, hehe. It was in excellent condition, and the cake baked in that pan looked really good, too.

My classmate Tess was the one who decorated Strawberry shortcake but since I also love this character, I borrowed it from her for a souvenir pic.

Mica's 1st Birthday Cake

I enrolled at Heny Sison Culinary School in April 2006 for Basic Cakes and Icing class. I was determined to bake Mica's birthday cake for her first bithday in August of the same year so months before August, I really made time to enrol. And the following weeks after I attened to that short class, cups and cups of flour, sugar and butter were the witnessess to my effort to perfect my cake.

August came and I able to make two birthday cake, both Pooh and Friends theme. I made a single layer round cake for intimate family dinner on the exact date of her birthday.

This is Mica's Pooh and Friends birthday cake during her Piglet party. I made two thick layers of mocha chiffon cake and spent long hours of decorating it.It was not the perfect cake, I admit. The marshmallow icing was not iced smoothly but my ever-loving husband praised it to the hig heavens! hehe!
