For my godson DAVID RUSSEL MEJIA RUEDA, I made a carrot-walnut fondant cake and lots of cupcakes in butter and chocolate flavors. I also made him lots of chocolate lollipops for his christening party to the delight of his guests, kids and kids-at-heart alike.






Florence wedding cake




This is the cake I made for my friends Edgar and Florence wedding last October 21, 2007.
Three-layer chocolate fondant cake, the top layer is six inch-round by 4 inch-high, the second layer is 10x4 and the bottom layer which is the only layer edible is size 14 x4.

My First Fondant Cake




This is the cake my friend Dindin and I made for my brother's wedding in December 2006.

I baked the banana-chocolate chip cake and Dindin helped me covered it with rolled fondant.

Hah, if not for Dindin's help, I would never make this cake a success. She's the first one who personally and painstakingly taught me about fondant. Until now, whenever I need help, Dindin is just a text away.

My sister in-law liked this cake. Ah, thanks! I know this is so simple but I couldn't risk making a more elaborate cake.

My Sister's Birthday Cake

This is a banana-chocolate fondant cake I made for my sister Espie when she celebrated her birthday last October.


I wish to give her a gold bracelet as a gift but I think, making a cute cake for her is sweeter, plus definitely cheaper, hehe.

I believed she appreciates her cake a lot because she didn't take a bite on this but packed it nicely and brought to her officemates in Laguna, which is about four to four and a half hours drive from here in Nueva Ecija.

And I was told that her cake after receiving admiration from fellows vanished in a snap. To my understanding, it meant they enjoyed my cake and found it yummy. Mmmm...

Pablita Cakes, finally!

This is a long time dream to have a cake business.

Though not the conglomerate type, actually, a little cake shop in a little town, I believe Pablita Cakes is going to be a stable home business.

It's been over a year since I accepted made-to-order cakes for all occasion. And I didn't have a name for my home business. First, I called it All About Cakes, then I changed it to Sugar Passion, then Cakes by Jamaica, then Cake Ni Mica, which is similar to Cakes by Jamaica.

Finally, after much deliberation from family members, we concluded in having it called Pablita Cakes.

It's like a tandem of a grandpa and a very cute lil girl, hehe. I got the name from my daughter's second name, a female variation of my father's name Pablito.
